In hydrocooling fresh fruit and vegetable are cooled directly by chilled water. Hydrocooler has some advantages compare with air cooler such as allows higher humidity ratio, rapid cooling, can handles large amount product. On the otherhand hydrocooler needs chlorination plant as desinfectant to avoid deseases, not suitable for sensitive to wetting product, needs some precaution to minimize energy used.}
