This study used a completely randomized design (CRD) with a comparison of banana bud and catfish consisting of 4 treatment levels, namely 0% : 100%, 10% : 90%, 20% : 80%, 30% : 100%, repeated 4 times. times to obtain 16 experimental units. The results of this study showed that the ratio of banana flowers and catfish had a very significant effect on water content, crude fiber content, protein content, taste and overall acceptability and had a significant effect on texture but had no significant effect on color and aroma. Comparison with the best quality found in banana bud 10%: 90% catfish with water content 6.20%, crude fiber content 0.63%, protein content 56.2% Color 2.5 (Yellow Brown), taste 3.43 (slightly tasted of shredded fish), aroma 3.66 (slightly flavored with shredded fish), texture 3.23 (a bit rough) and overall acceptance (3.89) (rather like it).} }
