Abstract :
Cassava tape is a food made from fermentation by involving yeast in the process
of making it. Detectors at temperature, humidity and weight are performed to see
the fermentation of yeast in cassava to tape. The purpose of this research is to
design the tape maturity detection tool automatically using Dht11 sensor and load
cell sensor, with Arduino uno microcontroller for maturation process and fuzzy
tahani method as the determinant parameter of maturity on cassava tape. From
this study obtained results that show that cassava tape in fermentation at a
temperature of 300C ? 350C in 24 hours can be said to mature, it is in tandainya
with texture, aroma, color and taste on the cassava tape is changed. So it can be
concluded that the fermentation tape using tape maturity detection tool can
improve the quality of tape produced.
