Abstract :
Penelitian ini bertujuan untuk mengetahui teknik pembuatan keripik marning singkong, besar biaya, penerimaan, pendapatan, keuntungan, nilai tambah serta permasalahan yang dihadapi pada usaha pembuatan keripik marning singkong milik Ibu Nurbayah di Desa Kasarangan Kecamatan Labuan Amas Utara Kabupaten Hulu Sungai Tengah. Metode yang digunakan ialah metode survei dan teknis observasi pada usaha milik Ibu Nurbayah. Hasil penelitian menunjukan bahwa teknik pembuatan keripik marning singkong meliputi pengupasan dan pencucian, pemarutan dan penguraian, penggorengan, pembuatan bumbu, pencampuran bumbu dengan keripik, penaburan gula, penyimpanan dan pemasaran. Biaya implisit sebesar Rp4.500.000, eksplisit Rp11.285.290, biaya total Rp15.785.290, produksi keripik marning singkong 1.200 kg, penerimaan sebesar Rp21.000.000, pendapatan sebesar Rp9.714.710, keuntungan sebesar Rp5.214.710, nilai tambah bruto Rp13.125.000, nilai tambah netto Rp13.088.775 dan nilai tambah bahan baku sebesar Rp8.750/kg dengan harga beli singkong sebesar Rp2.500/kg, sehingga mendapat kenaikan nilai tambah sebesar Rp6.250/bahan baku atau sebesar 250%.Hal ini menunjukan peluang usaha keripik marning singkong untuk diusahakan cukup besar. This study aims to determine the technique of making cassava marning chips, size, revenue, income, profits, added value and problems faced in the business of making marning chips owned by Mrs. Nurbayah in Kasarangan Village, Labuan Amas Utara District, Hulu Sungai Tengah Regency. The method used is the survey method and technical observation on the business owned by Mrs. Nurbayah. The results showed that the techniques of making cassava marning chips include peeling and washing, grating and decomposing, frying, making spices, mixing spices with chips, sowing sugar, storage and marketing. Implicit costs of Rp.4,500,000, explicit Rp.11,285,290, total costs of Rp.15,785,290, production of cassava marning chips 1,200 kg, revenues of Rp.21,000,000, income of Rp.9,714,710, profit of Rp.5,214,710, gross added value of Rp.13,125,000 , the net value added is Rp.13,088,775 and the value-added of raw materials is Rp.8,750/kg with the purchase price of cassava of Rp.2,500/kg, so that the added value is increased by Rp.6,250/raw material or by 250%. This indicates an opportunity The business of cassava marning chips to be cultivated is quite large.
