Abstract :
Edible bird nests are a rapidly growing industry in Southeast Asia. Indonesia
is a country with the greatest of edible bird nest?s supplier in the world. Food quality
requirements are free from microbes that can cause disease in food. One of the
microbes that cause foodborne disease is coliform bacteria. This research was
conducted to determine the contamination of coliform bacteria in the cleaned white
edible bird nest from Java. The results showed that 25 isolates out of 25 samples of
cleaned white edible bird nest from Java showed contamination of coliform bacteria
that exceeded the limit. This contamination is caused by a lack of hygiene and
sanitation in washing and storing system of edible bird nest?s manufacture and lack
of hygiene and sterilization of the workforce during the processing process. We
suggest the sterilization of water supply and improvement of personal hygiene are
urgently needed to prevent the presence of this bacteria.
