Abstract :
Pendahuluan Gangguan kesehatan yang diakibatkan oleh makanan yang sudah terkontaminasi mikroorganisme disebut foodborne illness. Hal ini disebabkan oleh kurangnya kesadaran masyarakat akan kebersihan pangan dan sanitasi lingkungan dengan proses pengolahan makanan. Di Pondok Pesantren Darul ?Ulum Peterongan Kabupaten Jombang jajanan pentol saus bumbu kacang sangat digemari oleh santri dan masyarakat sekitar karena harganya yang murah, rasanya enak, mengenyangkan dan dijual secara bebas dipinggir jalan. Tujuan dari penelitian ini adalah untuk mengetahui adanya bakteri Escherichia coli pada bumbu kacang jajanan pentol yang dijual di Pondok Pesantren Darul ?Ulum Kabupaten Jombang. Metode penelitian ini dilakukan secara deskriptif, populasi 4 penjual pentol di Pondok Pesantren Darul ?Ulum Peterongan Kabupaten Jombang, dengan teknik penelitian total sampling. Pengolahan data, coding dan tabulating. Pengujian identifikasi bakteri dilakukan dengan metode Pour Plate Tuang, dilanjutkan dengan pewarnaan gram dan uji biokimia. Hasil penelitian menunjukkan semua sampel yang berjumlah 4 tidak tercemar bakteri Escherichia coli namun tercemar oleh bakteri Klebsiella sp, hal ini juga diperkuat dengan tahapan pewarnaan gram dengan hasil bakteri gram negatif berwarna merah dan berbentuk basil. Kesimpulan Tidak ada bakteri Escherichia coli pada bumbu kacang jajanan pentol di Pondok Pesantren Darul ?Ulum Peterongan Kabupaten Jombang tetapi ditemukan bakteri Klebsiella sp. Kata Kunci : Bumbu kacang jajanan pentol, Escherichia coli ======================================================================================================================== Introduction to health disorders caused by food that already contaminated by microorganisme called foodborne illness. This is due to a lack of awareness of people?s food and environmental sanitation through the food-preparation process. Almost student in Darul ?Ulum boarding school that located in Peterongan District,Jombang Regency likes to eat meatball with bean sauce. The price is cheap,the taste is delicious, they feast and sell freely on the side of the road. The purpose of this study is to identify the existence of Escherichia coli bacteria on the gypsum peanuts that are sold in the coastal cabin of the jombang country. This research method was carried out descriptively, with a population of 4 meatball sellers at the Darul ?Ulum Islamic Boarding School, Peterongan, Jombang regency, with a total sampling research technique. Data processing, coding and tabulating. Testing bacterial identification was done by the method pour plate, followed by grams staining and TSIA test. Research shows that all 4 samples of the bacteria from Escherichia coli are unaffected by Klebsiella sp bacteria, which is also enhanced by grams pigmentation phases with red, basil negative grams. The conclusion there is no Escherichia coli bacteria on the gypsum bean sauce in the darul ?ulum boarding cabin of the Jombang country, and yet the Klebsiella sp bacteria discovered.
