Abstract :
As waste from pineapple fruit, pineapple skin contains bromelin enzymes as much as 0.05 - 0.08%. The presence of this bromelin enzyme can be used as a raw material for making palm oil. The process of making palm oil is enzymatically carried out with the addition of bromelin enzymes from pineapple skin. The bromelin enzyme is a proteolytic enzyme that can hydrolyze a peptide bond from a protein that can minimize the use of heat during the palm oil sterilization process. This study aims to determine the concentration of pineapple peel extract which produces optimal yield and the effect of adding pineapple skin extract to acid numbers, saponification numbers 50 %, 55%, 60% and free fatty acids in palm oil. The variables used are 50% pineapple skin extract concentration, and 15,20, dan 25 hours. The best yields of oil were obtained at a concentration of 60% pineapple extract and 25 hours curing time with a yield of 49,5%, an acid number of 0,282%.
