Abstract :
This research aims to determine the comparison of the organoleptic quality of grouper fish (Serranidae) caught in Gorontalo waters, especially in Tomini Bay which is a Fisheries Management Area (WPP 715) and Kwandang Bay (WPP 716). This research compares the organoleptic quality values of grouper samples taken from fish landing sites directly adjacent to each body of Fisheries Management Area. The samples tested came from 7 species divided into 5 Epinephelus genera and 2 Variola genera. sampling using the purposive sampling method. The organoleptic test results were compared using the T Test: Two-sample assuming equal variances with ? = 0.05. The results showed that there were significant differences in the quality of samples from Tomini Bay and Kwandang Bay..
