The source of carbohydrates commonly consumed by some Indonesian people is
white rice. Manufacturers spray aromatic substances and use chlorine bleach on
white rice to improve rice quality. The aims of this study were to identify the
chlorine content qualitatively in white rice in Cibinong and Ciluar markets, Bogor
district, to identify the chlorine content quantitatively in chlorine-positive rice and
to make efforts to reduce chlorine levels in white rice. Qualitative identification of
chlorine content using color reaction. The quantitative test of positive chlorine
samples was carried out using uv-vis spectrophotometry, the decrease in chlorine
levels was carried out by immersing at 60oC temperature for 15 minutes and
carrying running water 3 times. White rice that contains chlorine were branded
white rice obtained from Cibinong Market. The results of the analysis of chlorine
levels in white rice that were positive for a qualitative chlorine test were the average
in sample A 8 was 2.2 ppm ± 0, the average in sample A 10 was 2,566 ppm ± 0.011
and the average in sample A 11 was 6,679 ppm ± 0.012. The results of the analysis
of chlorine levels using the soaking and washing method showed a decrease in
chlorine levels in white rice containing chlorine, the average of sample A 8 was
45,45 ± 0,5162%, the average for sample A 10 was 41,50 ± 1.174% and the average
in sample A 11 was 43.81 ± 0.4243%.
