Abstract :
The demand for food safety guarantees is something that food processing
companies need to pay attention, to given the number of cases of food poisoning
per year. The company?s efforts to ensure food safety are in the form of food
safety assurance systems such as Good Manufacturing Practice and Sanitation
Standard Operating Procedures which consist of several aspects that regulate
food safety. The first objective of this research is to identify and analyze the gap
between the implementation of SSOP at PT. Mitratani Dua Tujuh with the SSOP
standard according to the Food and Drug Administration 1995. The second is to
identify and analyze the gap between the implementation of GMP at PT.
Mitratani Dua Tujuh with the GMP standard according to the Regulation of the
Minister of Industry of the Republic Indonesia Number 75 of 2010. And the last is
to provide recommendation on what actions the company should take to improve
the GMP and SSOP that are already running. The methodology used in this
research is descriptive with a quantitative approach. The population use is PT.
Mitratani Dua Tujuh and sample used is Quality Control Department. The results
obtained from filling out the questionnaire on the application of GMP and SSOP
using a checklist and processed using GAP Analysis on every aspect of GMP and
SSOP which is will then get a total percentage range of 99%, it means PT.
Mitratani Dua Tujuh has implemented a GMP and SSOP program in accordance
with the Regulation of the Minister of Industry of the Republic Indonesia Number
75 of 2010 and Food and Drug Adinistration of 1995. Considering the
recommendations for improvement, the company also needs to be able to improve
the quality of the GMP and SSOP programs that have been implemented by the
company.
