Abstract :
Banana chips are a commodity that is a special souvenir from Lumajang Regency. UD Burno Sari is one of the producers of banana chips in Lumajang Regency. In producing banana chips, there is a risk of producing defective chips. Defective chips are produced as a consequence of a production process that doesn?t go well. Thus, it is necessary to control the quality with a good method. This study aims to apply Statistical Process Control (SPC) as a quality control method. The analytical tools used at UD Burno Sari are np control charts, process capabilities, pareto diagrams, and cause-and-effect diagrams. The results of the application of the np control chart are statistically uncontrolled processes on the variables of shape wholeness, color uniformity and cleanliness of banana chips. UD Burno Sari achieve a good score for process capability on each defective variable. In the Pareto diagram analysis tool, the type of shape wholeness defect is a priority to be repaired immediately. Based on the application of a causal diagram, it was found that the causes of defects were bananas that were too ripe, the frying and washing processes were too rough, and the lack of supervision of employees. Therefore, UD Burno Sari needs to make improvements to its production process.
